About

Uchida opened in the postwar market in 1946 and remains the shrine of Tokyos motsuyaki (grilled offal) culture. The menu is pork offal only: tongue, heart, liver, intestines, uterus (kobukuro) and more, each grilled or served raw-style, ordered by cut and with codes for seasoning such as "shio", "tare", "yoku-yaki" (well-done) or "wakai-no" (young). Regulars order in shorthand, staff shout back, drinks are shochu-based "ume-wari" or beer, and plates are tiny and cheap. Lines form well before opening at 14:00, the best cuts sell out fast, and the place closes when the meat runs out. Its intimidating but unforgettable, and with the Tateishi redevelopment looming, a pilgrimage worth making soon.
