About

Making soba is a craft of seconds: the buckwheat dough is dry and unforgiving, and the rolling and folding must be fast and even. Edo Tokyo Soba no Kai is a working school, around 600 graduates, more than 200 of whom have opened their own shops, and its visitor class gives you a proper taste of that discipline. After watching an instructor demonstrate, you mix and knead the flour and water, roll the dough into a thin sheet with long rolling pins, fold it and cut it into even strands with the heavy soba knife, then sit down to eat your own noodles. The class lasts about two and a half hours and starts at 11:00. Instruction is in Japanese with gestures, so it's best for curious travellers comfortable following along, or with a Japanese-speaking friend.
