Kohakus name means amber, and its chuka soba lives up to it: a clear golden soup drawn from shijimi clams from Lake Shinji in Shimane, with deep, mineral umami and a light shoyu tare. The shop has only five counter seats and works on online reservations, so it is calm and unhurried. It is five minutes from Zoshiki on the Keikyu Line, conveniently on the way to Haneda.
