Tsubame-Sanjo ramen was born in the Niigata metalworking towns as a delivery noodle for factory workers: thick noodles that would not go soggy, a punchy dried-sardine soy broth, and a layer of pork back fat to keep it hot on the way. Ramen Jun, from Tsubame city, opened its first Tokyo branch in Kamata and it remains a pilgrimage for fans of the style. You choose the amount of back fat from light to "oni-abura" (demon fat), and the house speciality iwanori ramen comes buried under a dark heap of rock seaweed, which the original shop popularised. It opens long hours with no midday break, a reliable stop between flights or after a Kamata onsen.
