When Frank Lloyd Wright's Imperial Hotel was demolished in 1968, fragments of its textured Oya stone and terracotta were saved and built into this bar, so it is the closest you can get to Wright's Tokyo masterpiece in the city itself. The low-lit room with Art Deco lamps feels unchanged for decades. Order the Mount Fuji, created in 1924: dry gin, pineapple and lemon with a snowy cap of egg white and cream and a cherry for the rising sun. The main building faces a long-term redevelopment, so this is a bar to visit while you can.
