Sushibun claims a history stretching back to the days when Tokyo's fish market stood at Nihonbashi, and it served Tsukiji's market workers for generations before moving to Toyosu in 2018. It sits in the Fish Intermediate Wholesale Market building alongside the famous queue magnets, but the line here is usually far shorter. The omakase is a tidy run of market fish, and the signature is anago brushed with a nitsume sauce that has been topped up and reduced for decades.
