Santora 三ん寅
Sapporo-style miso ramen from a Sumire-trained chef: wok-fried to order and sealed under a layer of hot lard, a short walk from Edogawabashi.
Miso ramen with extra chashu: ¥1,550
About
Santora brings the classic Sapporo miso bowl to a quiet street near Edogawabashi. The owner comes from the Sumire lineage, and it shows: minced pork and vegetables are fried hard in a wok, the miso soup is added and brought to a roar, and the bowl arrives under a film of lard that keeps it scalding to the last sip. Curly, yellow, egg-rich noodles hold the rich soup, and a dab of grated ginger on the chashu cuts through it. It is the miso pick on Tabelogs Ramen 100 list and a perfect cold-day lunch.
