About
Shima opened in 2020 and quickly became one of the hardest seats in Shinjuku. Today it is reservation-only and starts serving at 8:45 in the morning. The star is a premium kombu-water tsukemen with white soy sauce and a strong truffle aroma, served with silky medium-thin noodles and nori, and loaded with four kinds of chashu, shrimp-and-pork wontons and a seasoned egg. The shoyu ramen is also superb.
