Hikiniku to Come ('minced meat and rice') opened in Kichijoji in 2020 with a single idea: a just-grilled, juicy hambagu patty eaten the moment it leaves the binchotan fire. You sit at a counter around the grill; freshly cooked rice from a hagama pot arrives in your bowl, and the cooks place three patties one after another as you finish each, so every bite is hot and dripping. Condiments on the counter, grated daikon, ponzu, house chilli oil, salt and raw egg for tamago-kake-gohan, let you change flavour as you go. The set is the only meal on the menu. The Shibuya branch near Dogenzaka is the easiest for visitors to reach, but because demand is huge, seats are allocated through in-store and online registration rather than a simple queue.
