About

Hatsufuji opened in 1959 in a residential part of Nakano-kamimachi, Hachioji, and is generally credited with creating what is now called Hachioji ramen. The style is distinctive: a soy-based broth sealed with a layer of lard to keep it hot, and a generous topping of finely chopped raw onion that adds crunch and sweetness. The name 'Hachioji ramen' was only coined in 2003, but here the bowl is still simply listed as chuka soba, as it has been for decades. The shop is low-key and far from the city centre, a pilgrimage for ramen lovers exploring the Tama area.
