About

Hachigo's chef spent decades cooking French cuisine before opening this shop near Higashi-Ginza. His chuka soba is built like a consommé: chicken, duck and Chinese ham (jinhua) stock clarified until amber-clear, seasoned without the usual tare sauce, and served with fine noodles, a slice of tender chashu and a single elegant garnish. The result is delicate, layered and unlike any other bowl in Tokyo, which is why Michelin lists it as a Bib Gourmand and why it appears in nearly every serious Tokyo ramen ranking. The shop has only a handful of counter seats and sells a limited number of bowls each day, so planning is essential.
