Tomoki buys mainly at Toyosu Market plus direct routes the chef has built with fishermen, keeping 25-30 kinds of fish in a cypress ice chest behind a single-plank Kiso hinoki counter. Signature bites include hairy crab from Funka Bay, red sea urchin with narazuke pickles (the chef's invention) and slowly steamed abalone. The omakase costs about 60,000-70,000 yen.
