About
Ichibun opened in 2017 and is run by chef Takeshi Ogawa and his wife. The omakase has 5-7 small dishes and 10-12 nigiri, about 18 items in all, and uses in-house tank-kept fish, ice-temperature ageing and low-temperature cooking alongside traditional Edomae technique. Rice portions can be adjusted on request.
