From the team behind Tori Soba Zagin, de (written with a circle and triangle) opened in 2018 and boils sea-bream bones into a creamy, fragrant tai paitan. The menu is a neat set of contrasts: Torori (rich white broth), Sarari (clear tai broth), Tsururi (kombu-water tsukemen) and Merari (spicy). Finish with tai rice. It is open every day from 10:30 to 22:30 and only five minutes from Shin-Osaka Exit 4, making it the best-rated ramen stop for Shinkansen travellers.
