About
Tohichi opened in 2015 and reopened in 2022 beside Eizan Railway's Shugakuin Station. Its tori shoyu ramen is a study in clarity: a broth of local jidori chicken seasoned with layered soy, silky noodles and tender chicken and pork chashu. The kombu-water tsukemen (noodles bathed in kelp water, dipped in a concentrated soy broth) is equally loved, and weekends bring seafood-based limited bowls. Tabelog rating around 3.74 and a Ramen 100 listing.
