Jigoku-mushi (hell steaming) is Kannawa's home cooking: households and inns have long cooked over the natural steam vents, and this city-backed workshop lets anyone do it. Choose a set (seafood, vegetables, pork, eggs, sweet potatoes) or individual items at the counter, rent a kama steam oven by the 15-minute block, put on protective gloves and hand the basket to staff or load it yourself; the 98°C steam cooks food quickly while sealing in flavour with a hint of mineral salt. Eat at the tables or the outdoor seating, then soak your feet at the free foot steam outside. It's one of the most memorable meals in Beppu.
