About

Yoshino has been shaping sushi a few blocks from the old Nihonbashi fish market since 1879 (Meiji 12). It is often cited as the shop that first served toro on nigiri in the early 20th century, when the fatty belly was still considered waste, and the house still treats tuna as the star: lean akami, chutoro and otoro sliced from the same block so you can taste the gradient. The counter is calm and businesslike, the chefs work in the classic Edomae way (kohada cured in vinegar, simmered clam and anago brushed with nitsume) and lunch sets remain one of the best-value ways to eat at a genuinely historic Tokyo sushi counter.
