About

Hatsune has been cooking in an alley south of Nishi-Ogikubo Station since 1961 and is regularly listed among Tokyo's top ramen shops. Its specialty is tanmen, the Tokyo working-class classic of noodles in a lightly salted chicken and pork broth topped with cabbage, bean sprouts, carrot and pork tossed in a blazing wok. Here the vegetables are crisp, the broth is clean but deep, and the noodles are a springy medium thickness. The shop is small and the atmosphere unmistakably Showa, with a counter where you can watch the wok work. It opens for a long lunch only, so plan around it when exploring Nishi-Ogikubo's antique shops and cafes.
