Fukku opened in 2018 after its owner spent five years at the celebrated miso shop Hanaichi, and it quickly rose to the top of Tokyos miso rankings. The soup is a pork broth blended with white miso, garlic and a hint of chilli, thick and rounded, poured over medium-thick wavy noodles and topped with pork belly and loin, minced pork, menma and stir-fried bean sprouts. The spicy miso is just as good. It is about eight minutes on foot from Ogikubo station, one of Tokyos classic ramen towns.
