About

'Toryumon' means 'gateway to success', and this is where Ginza Onodera's young chefs train in front of real customers. In exchange for their learning curve, guests get high-end fish, including tuna from the famed wholesaler Yamayuki in akami, chutoro and otoro cuts, plus sea urchin, at prices far below the group's fine-dining counters. It has gone viral on TikTok and Instagram, so tickets are handed out before opening and the line forms early.
