About
Sushiko was founded in 1885 (Meiji 18), making it one of the oldest sushi houses in the district. The current generation kept the Edomae fundamentals (careful curing, simmered and marinated toppings, firm vinegared rice) while becoming one of the first sushi counters in Japan to build a serious wine list to go with them, alongside sake and shochu. The atmosphere is quietly grand without being stuffy, the staff are used to overseas guests, and lunch offers a much more affordable way to sit at a 140-year-old Ginza counter.
