About
Kagari's honten sits in a narrow alley behind Ginza's main street, with about eight counter seats and a queue that is now a Ginza landmark. The signature tori paitan soba is a velvety emulsified chicken broth, served with thin noodles, low-temperature chicken chashu and crunchy seasonal vegetables. There's also a niboshi (dried sardine) shoyu and a tsukemen. The shop has since spread across Japan and overseas, but the original remains the definitive bowl.
