Tower Knives, run by Canadian Bjorn Heiberg, is the easiest place in Osaka for visitors to choose a quality Japanese kitchen knife. Knives from Sakai, the city south of Osaka famed for blades, sit next to work from Seki, Miki and other centres. Staff explain steel types, handle styles and care, and there is a workshop at the back where you might see knives being sharpened. Purchases are beautifully wrapped, and duty-free is available.
