About

Chef Matsumoto trained in Tokyos Edomae tradition before opening this intimate counter off Hanamikoji in Gion. The style is classic: red-vinegar rice seasoned to match each fish, carefully aged tuna and hikari-mono, and Kyoto touches in the side dishes. It was chosen for Tabelogs Sushi WEST 100 in 2025, and it also serves lunch, which is the easiest seat to book.
