Kagizen Yoshifusa Shijo Honten 鍵善良房 四条本店
An Edo-period wagashi maker in Gion famous for kuzukiri: glassy arrowroot noodles served on ice in a lacquer box with a pot of dark brown-sugar syrup.
About
Kagizen has made Kyoto sweets in Gion since the mid-Edo period, and its shop on Shijo-dori is a lovely, calm space of dark wood and craft furniture. The signature is kuzukiri, made to order from pure Yoshino arrowroot, served chilled in a tiered lacquer box with kuromitsu syrup for dipping. The dessert is almost silent on the tongue and perfect in summer. Seasonal namagashi with matcha are also excellent, and the shop sells beautifully boxed sweets.
