About
Tōyōken was founded in 1926 by Miyamoto Shirō, a chef who had cooked in the imperial household kitchen. Here, according to the restaurant, toriten was born: pieces of marinated chicken fried in a light tempura batter and dipped in vinegar-soy sauce with mustard. The dish became Ōita prefecture's comfort food. The restaurant, in a Western-style building on the edge of central Beppu, serves toriten alongside a menu of Chinese dishes.
