About

Beppu reimen was born after WWII when cooks from Manchuria brought northern-style cold noodles to the city, and it evolved into a local speciality: thick, chewy buckwheat-and-starch noodles in a clear, chilled beef broth topped with sliced beef or chashu, cabbage kimchi, a boiled egg and sesame. Kogetsu has been one of the defining shops for decades, a no-frills counter-and-table place where the menu is short (reimen, onmen hot noodles, bibimbap-style bowls) and noodles run out by late afternoon. Locals eat it year-round, even in winter, and you can ask for it 'ninniku' (with garlic).
