At Takumi Tatsuhiro the counter spreads like a fan around the kitchen so every guest sees the action. Chef and apprentice serve snacks and nigiri in turn with practised timing; the house snack is iwashi isobemaki, bite-sized sardine wrapped in nori. Old-school touches include spring sea bream topped with sweet egg-yolk flakes and lean tuna paired with mustard, and the rice comes from farmers on the chef's native Noto Peninsula.
