About
Chef Atsushi Yamamoto opened in Hatagaya in 2006 and moved to Shinjuku 2-chome, where the shop held a Michelin star before moving to Bib Gourmand. The bowls are refined and aromatic: hamaguri clam and sea bream dashi blended with pork and chicken, seasoned with shio or shoyu and topped with black truffle sauce, porcini oil and delicate chashu. A small, quiet counter with a ticket machine; the restaurant now has branches abroad but the Shinjuku shop is the original.
