Shinji Kanesaka's Ginza flagship, open since 2000, is one of the great schools of modern Edomae sushi: Takashi Saito of Sushi Saito trained here, and the Michelin Guide singles out the chef's leadership of his young team. The 2026 guide gives it two stars. The sushi is classic and elegant, with an emphasis on 'iki' (freshness and style), and the restaurant is notably easier to book than many peers, especially for lunch. There is also a branch inside the Palace Hotel Tokyo with lower-priced lunch sets.
