About
Jiro Ono opened his counter in the basement of the Tsukamoto Sogyo Building, at an entrance to Ginza Station, in 1965, and turned it into the most famous sushi restaurant on earth. The 2011 documentary 'Jiro Dreams of Sushi' made it a pilgrimage site; it held three Michelin stars for years until the guide dropped it in 2020 because the general public could not reserve. The meal is a rapid sequence of around 20 nigiri, often finished in 30-40 minutes, with Jiro's elder son Yoshikazu now doing most of the work. It is a bucket-list experience rather than a leisurely dinner, and access is the main challenge.
