About
Sanosushi's chef aims for Edo-period orthodoxy: generously sized nigiri with thick-sliced toppings, simmered clam and anago finished with rich nitsume, all served on traditional tsukedai trays. Before becoming a sushi chef he worked as an interior contractor, and he designed the restaurant himself, down to the handwritten fish names on the wall that evoke an old neighbourhood sushi shop. It holds one Michelin star with a moderate price band, a short walk from Tokyo Tower.
