Samboa began in 1918 and its Kansai bars helped define the Japanese highball. The Ginza basement continues the style: a wooden standing counter (a few seats too), white-jacketed bartenders, and the signature highball, chilled whisky and soda poured without ice with a twist of lemon. Regulars in suits drop in from mid-afternoon. Order a beef cutlet sando if hungry; it is one of the best bar snacks in Ginza.
