About
When the chef opened in Nishi-Azabu, the area had few sushi restaurants, and 'Taku' means 'to blaze a trail'. He was among the first sushi chefs to hire a sommelier, and pairings of wine and sake are part of the experience. The omakase is long and varied, starting at around 30 items with nigiri alternating with drinking snacks, and the rice is seasoned with red or white vinegar depending on the fish. It held two stars from 2008 to 2018 and one star since, including the 2026 guide.
