About
Sushi Shin sits on a corner near the Japanese Red Cross Medical Center in Nishi-Azabu, and has been in every edition of the Michelin Guide Tokyo; in the 2026 guide it was promoted from one to two stars. Chef Shintaro Suzuki is admired for his knife work: hidden scoring so flavour soaks in, temperature controlled to the piece, rice and topping balanced with economy of motion. The counter is welcoming to overseas guests, and both lunch and dinner are served on several days a week, giving travellers more chances to get a seat than at many top counters.
