About
Butagumi was founded by a chef who moved from French cuisine back to tonkatsu, and it treats pork like wine: the menu lists brand pork from around Japan, each with its own flavour and fat, fried to suit its character. A long-researched ice-temperature ageing method is used for some cuts. It is a Tabelog Tonkatsu Hyakumeiten regular.
