When Menya Musashi opened in 1996 it caused a sensation by blending an animal-bone broth with a separate dashi of dried fish and kelp, a 'double soup' that is now everywhere in Tokyo. The shop is named after swordsman Miyamoto Musashi, and the staff keep up the theatre with loud, synchronised calls as bowls go out. The original store, a short walk from Shinjuku Station's West Exit, serves rich shoyu-based ramen and tsukemen (dipping noodles) with thick-cut chashu pork belly, plus the option of a seasoned egg. It is a good introduction to modern Tokyo ramen without the extreme queues of the newest viral shops, and a reliable late-lunch stop between Shinjuku sights.
