About
Kaijin is on the second floor of a building close to the south side of Shinjuku station. Its ara-daki shio ramen is made by simmering fish bones (the catch varies with the season) into a clear, delicate salt soup, topped with fish and chicken tsumire balls and a sliver of yuzu. It is a refreshing change from heavier Shinjuku bowls and a long-standing traveller favourite.
