About
Ginsasa hides in a back lane of Ginza 8-chome, toward Shimbashi and Shiodome. Its founder trained in Japanese cuisine, and it shows in the light, dashi-rich shio ramen and in the signature tai-meshi, rice cooked with sea bream. The local move is to finish by pouring the last of the soup over the rice for a chazuke-style ending. A quick, elegant lunch a few blocks from the Ginza department stores.
