About
Kizushi opened in December 1923 on the burned-out streets of Ningyocho after the Great Kanto Earthquake, and its old wooden building is one of the most atmospheric sushi settings in the city. The fourth-generation master keeps the old techniques alive: kohada and sayori cured with vinegar, tuna marinated in soy, clams and octopus simmered, shrimp boiled, and egg made the traditional way. Prices are reasonable for the quality and history, and the mood at the counter is warm rather than stiff, making it a favourite of Tokyo food writers who want 'real' Edomae without Ginza theatre.
