Kanda Yabu Soba かんだやぶそば
The head of Tokyo's 'Yabu' soba lineage, serving green-tinged seiro soba in Kanda since 1880.
About
Kanda Yabu Soba took over a branch of an Edo-era soba house in 1880 and became the senior shop of the 'Yabu' family of soba restaurants, whose style is pale green-tinged buckwheat noodles served on bamboo trays with a sharp, concentrated dipping sauce. The portions are deliberately small, in the Edo way of eating soba as a quick snack with sake. Its old wooden building, a Tokyo-selected historic building, was badly damaged by a fire in February 2013; the restaurant was rebuilt on the same site and reopened in October 2014, still using the hanging lantern and signboard that survived the blaze. Listen for the woman at the counter who calls out orders to the kitchen in a sing-song chant.
