A yellow, 24-hour ramen landmark beside the National Stadium. Hope-ken grew from a 1935 yatai cart and this Sendagaya shop, open since about 1960, helped create Tokyo's back-fat (seabura) tonkotsu shoyu style.

About

The Hope-ken story starts with a ramen yatai in 1935, and its Sendagaya shop, operating since around 1960, became a late-night fuel stop for taxi drivers, students and athletes. The bowl is a template for Tokyo 'se-abura' ramen: a cloudy pork-bone and soy broth, medium-thick noodles and a shower of pork back fat, served in a tall yellow building facing the National Stadium. On the ground floor you eat standing at the counter; seats are upstairs. The best part is the help-yourself pot of chopped green onions on the counter, which regulars pile on, plus grated garlic and chilli. Open around the clock, it is one of the few places in Shibuya Ward where you can get a historic bowl at 4am, and it is packed after stadium events.
