About

Gyukatsu is beef breaded in fine panko and flash-fried for about a minute so the crust is crisp and the inside stays ruby red. Motomura's Shibuya original, down a narrow staircase south of the station, made the dish famous with travellers: each diner gets a small tabletop hot stone to sear slices to their preferred doneness, then dips them in wasabi, soy, sansho salt or a tangy house sauce. Sets come with rice, miso soup, cabbage, potato salad and optional grated yam (tororo) to pour over the rice. The room seats only around a dozen at a counter and a couple of tables, which is why the queue on the stairs and pavement is part of the experience. Motomura now has many branches (Shinjuku, Harajuku, Ueno, Akihabara and more), and they serve exactly the same thing, often with shorter waits.
