About
Ibuki, near Shimura-Sakaue on the Mita Line, is a pilgrimage shop for niboshi fans. Its soups range from a clear broth made only from water and dried sardines to a thick, almost cement-coloured niboshi bowl with animal stock that hits with bitterness and umami. Thin, firm noodles stand up to it. No reservations, just a quiet residential line near Mitsugi Park.
Highlights
- Ultra-dense niboshi soup
- Pure water-and-sardine version
- Firm, thin noodles
- Local favourite near Mitsugi Park
Tips
- Take exit A2 at Shimura-Sakaue, then walk about five minutes downhill.
- No reservations; arrive near opening.
- If unsure, start with the lighter bowl: the dense one is intense.
