Benten-yama Miyako Sushi opened in 1866 (Keio 2), at the very end of the shogunate, beside the little Bentenyama hill near Senso-ji, and is now in its fifth generation. It is one of the purest places in Tokyo to taste pre-refrigeration Edomae technique: tuna marinated in soy (zuke), kohada cured in salt and vinegar, clams and anago simmered and glazed with nitsume, shrimp boiled rather than raw. The counter seats are where you want to be, watching the chefs work with a calm that matches the old wooden interior. A rewarding contrast to the conveyor and kaisen-don crowds around Asakusa.

- Closed Mondays (and some Sundays): check before you go
