About

Umi is run by its fifth-generation head chef, Shimamoto, who follows his late predecessor's motto to 'make sushi with the heart, not just technique'. The nine-seat counter serves omakase at lunch and in two dinner seatings, and the group now also runs branches in Yaesu and Ginza. It is a long-time Tabelog Award winner.
