Sushiman traces its roots to a fishmonger that opened at the Uo-no-tana fish market (todays Koraibashi) in 1653 and became a specialist in suzume-zushi in 1781: small sea bream (kodai) pressed over vinegared rice so that the plump shape resembled a sparrow. It is widely described as the oldest Osaka sushi specialist still in business. The Utsubo-hommachi main shop near Utsubo Park is where the base ingredients for every branch are prepared, and it sells the full range of boxed Osaka-zushi, including kodai suzume-zushi, battera, anago and hako-zushi. For eat-in, the company runs restaurants in Daimaru Shinsaibashi, the RIHGA Royal Hotel and Abeno Harukas.
