Aizuya Tamade Honten 会津屋 玉出本店

The shop that claims to have invented takoyaki in 1933: small, sauce-free balls flavoured with dashi and soy right in the batter, eaten plain. A pilgrimage for anyone serious about Osaka street food.

About

Founder Tomekichi Endo started with 'radio-yaki', batter balls filled with beef and konjac, and switched to octopus in the 1930s after a customer from Akashi told him that's how they did it there. Aizuya's takoyaki are still made the original way: smaller than modern versions, firm rather than gooey, and seasoned inside so they need no sauce or mayonnaise at all. The main shop sits in a quiet residential stretch of Nishinari by Tamade Station, a world away from the Dotonbori crowds, and is a favourite stop for food historians and locals. You can also order the original radio-yaki to taste the pre-octopus version.
