Matsuzushi sits in the quiet back streets of Oji-cho, near the Kitabatake shopping street, far from any tourist trail. Second-generation chef Yohei Tanigawa took over his fathers town sushi shop and turned it into one of Osakas hardest bookings, earning one Michelin star in the Kyoto-Osaka guide and a place in Tabelogs Sushi WEST 100. The counter seats only eight, and the course centres on nigiri: well-aged fish, warm akazu-tinged rice and a rhythm that is relaxed and friendly rather than formal. It is the kind of place locals describe as a neighbourhood shop that happens to be world class.
