Kanda Katsumoto takes tsukemen in the opposite direction from the thick, sludgy style: its dipping soup is clear and bright, built on dried sardine and bonito, and the noodles are silky and springy. The 13-seat counter near the Jimbocho book town opens at 11:00 and runs until the soup runs out, nominally 17:00. A great lunch after browsing the secondhand bookshops.
